As the skewers come off the coals, the meat is slid straight onto a sheet of lavash with charred onions, tomatoes and a fistful of herbs, then wrapped and shared. This bundle is sized for a backyard gathering, so there is always enough to go around and then some.

Serving suggestions
Warm sheets on the edge of the grill. Wrap grilled meats and vegetables with raw onion, sumac and parsley. Keep a damp tea towel over the stack to hold the warmth.
Storage
Best on the day. Keep sealed and at room temperature; warm briefly before serving. Freeze any extra on the day of collection.
