Crispy Lavash Chips, Three Ways

Turn soft or slightly firm lavash into crisp oven-baked chips with three savoury seasoning options: sumac and sesame, smoked paprika, or garlic and herb.

Lavash does not have to remain soft to be useful. A sheet that has become a little too firm for a neat wrap is often exactly right for the oven: thin enough to crisp quickly, broad enough to cut into generous dipping pieces, and already carrying the uneven bubbles that brown first.

This method makes one tray of chips with a light coating of oil. Choose one seasoning for the full batch, or divide the cut lavash into three bowls and make a tasting tray.

Choose the texture before the flavour

The chips crisp most evenly when they sit in a single layer with a little space between them. Overlapping pieces trap steam and remain leathery in the middle. If you are using two trays, swap their positions halfway through baking.

Lavash is thin, so the final minute matters. Pull deeply golden pieces early and return pale pieces to the oven rather than waiting for every chip to colour at once.

Three seasoning directions

Sumac and sesame is tart, nutty and excellent beside hummus or a cucumber-yoghurt dip. Sesame is an allergen, so leave it out when serving anyone who needs to avoid it.

Smoked paprika and oregano suits tomato salsa, bean dips and casual drinks. Use sweet smoked paprika rather than hot paprika if children will share the tray.

Garlic and herb is the quiet all-rounder. It works beside soup, on a grazing board or crushed over salad in place of croutons.

Dips and serving ideas

Serve the chips with hummus, labneh, roasted eggplant dip or a bowl of thick yoghurt seasoned with cucumber, lemon and dill. For a larger spread, combine crisp chips with a separate stack of warm soft lavash so guests can choose between dipping and wrapping.

Storage and re-crisping

Let the chips cool completely before closing the container; trapped warmth creates condensation and softens them. Store in an airtight container at room temperature for up to three days for best texture. If they lose their snap, return them to a moderate oven for two or three minutes and cool again before serving.

Recipe

Ingredients

  • 2 large sheets soft or slightly firm lavash
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon fine salt
  • For sumac and sesame: 1 teaspoon ground sumac and 2 teaspoons sesame seeds
  • For smoked paprika: 1 teaspoon sweet smoked paprika and 1/2 teaspoon dried oregano
  • For garlic and herb: 1/2 teaspoon garlic powder, 1 teaspoon dried parsley and 1/4 teaspoon cracked black pepper

Method

  1. Heat the oven to 180°C fan-forced (200°C conventional). Line two large baking trays with baking paper.
  2. Cut or tear the lavash into pieces about 6-8 cm wide. Keep the pieces broadly similar in size so they finish together.
  3. Place the lavash in a large bowl. Drizzle over the olive oil and toss gently with clean hands until there is a very light coating on both sides.
  4. Add the salt and one seasoning option. If making all three flavours, divide the oiled lavash between three bowls and use one-third of each listed seasoning mixture in each bowl.
  5. Arrange the pieces in a single layer on the trays without overlapping. Bake for 4 minutes, then rotate the trays and turn any pieces that are colouring much faster than the rest.
  6. Bake for another 2-4 minutes, watching closely, until the chips are dry and lightly golden. Remove darker pieces as soon as they are ready.
  7. Cool completely on the trays. The chips become crisper as they cool, so wait five minutes before deciding whether any pale pieces need another minute in the oven.
